Report a translation problem
Make sure you have a full party (4 characters) before leaving town. The Lone Wolf trait is not a good idea for a first playthrough: it's a challenge mode rather than an equal tradeoff.
You want to head west from the city to begin with - the western gate on the main level, not the one onto the beach. It's near the undertaker's house and the abandoned smithy in that part of town and is the only one that doesn't require you to pass through doors on the way out. The enemies in this area are level 3-4. Aim to complete the lighthouse subplot before moving north.
I have explored the town as well as under town (catacombs when digging graves etc).
The location you are talking about was packed with groups of 7 undead each. I tried engaging them, but 7 were too much for me.
We were at level 4.
if I try to go to the lighthouse, there are orcs lvl 6+ that kill me as well...
There are no orcs on your way to the lighthouse, how is your party setup?
The 7 Skeleton Encounter might be the one when you leave the Underground trough the Well? Because iirc, that's meant to be two encounters, each being 3~4 Enemies, which should go that way if you come from the City instead of the Well.
I think it's actually easier initially since it's harder for individual characters to die. But you have to have the right Lone Wolves.

The large undead packs are to the north, not to the west, unless you're somehow pulling two or more encounters at once. There are no orcs on the path to the lighthouse - if you're encountering orcs then you're leaving by the beach gate, and that's the wrong one.
Are you using summons? A point in geomancer will allow a character to get Summon Spider and Midnight Oil, neither of which require boosting intelligence, and Boulder Bash, which is a ranged attack that doesn't need a line of sight (which may come in handy if your mixing oil or poison with fire, which you should be, especially with undead).

You can reach level 4 and 60% of the way to level 5 before leaving town if you really milk all the available xp.
You have a choice of 4 different companions to join your party before leaving town. Pick 2 to add to the 2 you created at the start and you will have a party of 4.
If you have to ask a guard to open the gate to get out of town... YOU ARE GOING THE WRONG WAY.
If you see orcs... YOU ARE GOING THE WRONG WAY.
Just because you have to go north to solve the murder does not mean that is the way you should be going! You will finish the 1st part of that quest around level 6 or 7 and the 2nd part around level 11 to 13.
Do not treat this game like an MMO where you pick a quest in your journal and focus solely on completing it. Many of the quests you pickup in town won't be completed until many levels later.
Decide where to go based on the level of the enemies you encounter. There is ALWAYS enemies the same level as you to fight. If you don't see them... YOU ARE GOING THE WRONG WAY!
It really is as simple as that. If you stick to going where you see stuff your level, and if you eventually uncover all fog of war on the map, you will complete the quests through natural exploration and fighting.
