The name of the new tree
So, this game has been a fantastic nostalgiagasm for me, I was just a kid when I played this the first time, I don't know how many times I played it, probably 4 or 5, but then I hadn't played it in 8 years or so. I'm amazed by how deep the story and characters are, especially Kratos and Regal, who I never really cared too much for as a kid.

Anyway as the title implies, this is a slight spoiler, but anyway when I was a kid I knew nothing about Norse mythology, and I always hated that cliffhanger at the very end. I think I wound up assuming the name was Symphonia or something.

now it's pretty obvious what the name of the world tree is... Yggdrasil... like duh. The tree that connected the worlds. Also if you are willing to consider Dawn of a new World as cannon (despite being objectively the worst legit tales game... Legendia doesn't count since it wasn't even made by the Tales team), Ratatosk comes from Ratatoskr which was a squirrel that ran up and down the world tree delivering messages in Norse mythology.

I'm just curious if most people realized what they were going for there.

Yeah it's Yggdrasil. Symphonia is Phantasia's distant prequel, and the tree in Phantasia is known as Yggdrasil.

I believe the name is also confirmed in ToS2: Dawn of the New World if memory serves.

Sorry to disappoint you but if the Tree is remembered as Yggdrasill, his true name is Gonzalez as stated in the manga which is strangely revered for telling the true ending.
Anyway, let's just say it's Yggdrasill. Norse mythology is always better than tacos
