I agree, I always like to have a 100% playthrough and a save where I can set my own mission parameters.
Now there is no online and still no savegame slots
it is called Ubisoft BS as always.
at least Ubisoft > EA
1) Open Uplay, turn off cloud sync for the game.
2) Delete local save content
3) Start the game (it will have all default settings/game status)
4) Rinse and repeat as you wish
Turn cloud sync back on to store your new data if you desire to.

EDIT: Warning: This process is irreversible so back up local save files if you wish, as all progress/unlocks will be removed. With the exception of earned acheivements stored via Uplay.
But if you have the patience to delete your savedgame and copy everytime its fine, but most people don't know how to do it and will just buy another game and dont bother.
