New traders (as of 1.1) in Gaia's Garden
So of course one of the three is the trade-in for the tower defense challenge tokens, I found that one, but where are the other 2? I've scoured through just about every place I can think of.

(Also, the ones that existed before this are the guy at the entrance to the Garden, and the two one in the Eastern part of the bird village)

Have you tried talking with the old traders? I believe it also counts for updates to trader's stock. Hopped in game just to double check and I've 6/6 traders, but only 5 listed in the trader book for Gaia's Garden.

The new traders are both of the tower defence objectives. The second trader is behind the door that the first one is outside of, and seems to count for 2 traders.

I've talked to both and both of them counted only as one for me - and it's a total of 3 new traders - it used to be 3, now it's 6.

Yep that was it.
Apparently one of the tower defense machines didn't register (maybe I didn't open the trade menu or something), and after talking to the original set I'm at 6/6.
