I Said yes to the prompt if she wants to race, maybe that increases the difficulty of wining it.
The issue is that it is not always clear if you actually won.
The winner is sometimes pre-determined. I know because I played in Early access and at times we got access to to the dungeon before the race for that dungeon was implemented. So you could do the dungeon in less than a minute because you cleared all the puzzles and still lose to one of the characters.
In the DLC you win against Apollo but not Emilie, so I don't know if we beat the race or not.
