there is a conversation with peter that says she is younger than him, not counting her years dead, so early/mid 20s
Lilith's journals reveal that Hunter was born on the 17th or 18th November, 1694. Hunter's journal ends on November 3rd, 1712 with the words "Only one of us shall walk away from the storm that awaits.... It will be me. I can feel it... there are only moments left." implying Hunter was almost 18 at the time of his/her death, though you could reason (or there may be other sources suggesting) that the final battle came some time, maybe even some years, later.
There is a limit on this though, because we know Hunter was dead for more than 300 years (several places in the dialogue state it's more than 300, not less and Hunter tells Peter Parker, a grad student that (s)he is younger than him in years lived) and the current year is placed by Wanda's journals, which conclude just before Agatha's death on April 14th, 2020, some months before the start of the game.
So for sure between just shy of 18 and 26, but probably right at the bottom of that range.
He comes off more 30s to me.. way too old for 20's..
As a gen-X'er I personally WANT my Hunter to be on the older side, if I had my way we'd be grizzled, and more like somebody who had been fighting demons for decades vs just a few years.
Game lore does seem to put us at about 18 if we are to believe the references pointed out, and sorry no offense to the zoomers but that's still basically a kid and not a battle hardened veteran of demon wars.
But hey, it's all a fictional make-believe story written by somebody else, so we are free to edit our own head-canon as we see fit!
Not a veteran of decades, but in those days people joined the army at 15 and those who survived could have been war veterans by the time they turned 20.
Hunter has most likely been killing monsters since their early teens. Yeah, horrible child endangerment in modern ages, but back in those days kids much younger than that were also working in coal mines.
And I know that child soldiers ARE a thing, even today. It's totally possible to have an 18 year old person who'd been fighting for years. But that doesn't make me feel any more comfortable playing a character who is basically still a kid!
So they're effectively a good deal older.
