From design standpoint, to spruce up the backtracking (especially when you visit the place for like the 10the time) and to introduce harder enemies once you get rather strong and 1-shot-kill most of the old ones.
From story standpoint, keep on playing and listen to the NPCs\read logs. But the common knowledge is, the Hallownest fell because of the infection thing that makes bugs go mad and aggressive. The infection spreads and the crossroads are an example of this.

Also, mechanically, it is because you either defeated the Broken Vessel, or you killed one of the Dreamers. Once you do either of those things it triggers the Infected Crossroads.

So the broken vessel actually contained some of the infection himself?
Three things 1. Nice Necro 2. You see infection go into his cracked head in the beginning of the fight 3. If he contained the infection than it should've been released at ancient basin and not in the crossroads. So it is just simple progression of the infection breaking out of the Hollow Knight

Sorry, I stumbled upon the discussion just now via google, and by the way couldn't it just mean that since the broken vessel dies vs the knight, the hollow knight takes also the pressure of what the broken vessel held and was unable to supress everything? that would explain why the crossroads get infected only if one of two specific enemies die(either one of the dreamers or the broken vessel)

Technically when you see him he is dead and the infection brings him back to life until you kill him again
