Look, I love this game. It's great, but this boss fight is awful.
Specifically because there is no way to figure out if the bosses are going to do a rolling charge or a rolling bounce until they start doing it. That, and the attacks being homing mean it's damn near impossible to not get knocked around because there's 2 of them and they attack out of sync.
I've almost beaten the boss a couple times but only by spamming magic because there is no way to actually sword fight them with how fast they dash around the room.

If it was just 1 at a time, I could handle it.
If they had a tell to whether it would be a bounce or not, I could handle it. And to an extent, they do. If you're airborne or on a wall they'll bounce 95% of the time, but they will also bounce while you're on the ground, so that jump you did to dodge the rolling attack just got you a face full of spikes, and even with quick focus you can't heal in this bossfight unless you can get them both to charge a wall as you super dash to the other side, which is frankly hard to do.

I really love the boss fights in general because they're difficult but fair, but this boss fight just feels like RNG. The less they bounce the further I get, but sometimes they just bounce non stop and there's never a window to attack and almost no windows to dodge. It's not fun, it's infuriating.

Yeah and the Watcher is very end game too. He's one of the dreamers that unlock the final boss. You can easily save him for after you've obtained the necessary upgrades to make bosses in this game a joke. Or you can fight them earlier than necessary and complain about the difficulty. Make it easier on yourself!
I don't think the Watcher Knights are end game, they're pretty easy to kill, i killed them and did go to Kingdoms edge for the first time, also i have lot of unexplored area and places i didn't discover yet.

Okay so I beat the Watcher Knights... but in Lurien the Watcher's dream he didn't fight back? I hit him a few times and collected his dream essence.... he didn't even budge.... ???!?

The OP had some trouble with them. Whether a boss is easy depends on the player and what his playstyle is like. Some bosses are a nightmare for people who try not to get hit all the time because the boss is constantly in your face. Yet a player who sees it as a struggle of DPS vs Healing might equip the extra invuln and life charms and just face tank the boss effortlessly because of its low hitpoints.

Many people have complained on these boards about the Broken Vessel or Lost Sin yet they're kind of quick to smackdown at close range because of how zealous they are to be near you. An easy boss for me is a struggle for someone else.

I died for him quite a few times, but when you learn the pattern it gets easy.
Yeah I only had the tier 3 sword and double jump when I attempted the boss fight.
Waiting until you have Shadow Cloak and the Pure Nail makes basically any boss a piece of cake, I wouldn't really consider that to be the best way to do things. Especailly since this game is so open ended, it's incredibly easy to miss bosses or upgrades as you're exploring. I did not find Hornet 2 until well after I had collected all the Dreamers. I'd even beaten 2 of the 3 empowered Dream bosses.
I did have Shadow Cloak before I attempted Soul Tyrant.

My biggest issue with the Watcher Knights is that they're so different than other boss fights. All of the other boss fights can be done with minimal gear, all of their attacks are dodgeable with just jump and dash. Watcher Knights, unless you get in their face one is going to bounce and the other will roll eventually, and without Shadow Cloak you can't avoid their slashes very easily at all. The fight is simply unpredictable if you do anything but get in their faces.
I'm definitely going to leave them for later on my next playthrough. They're just not enjoyable to fight.
I personally beat them without the shadow cloak (but I also didn't take zero damage) just by staying away from them. Their attacks are long range charges that try to get closer to you, so I did what I did with Hornet and stayed away from them. That let me safely pick off one at a time and heal between assaults. Jump dash is like my best friend in this game.
Is that the arena with the candeliers that provide the source of reanimation to the watchers? You can just wall jump on the siides repeatedly, out of range of their boucing attack, wait till they roll int othe wall below you, and downward aerial attack off their heads. One of the easiest cheese fights in the game.
I've reached Watcher Knight now. There's some good advice above which I'll try later, but for now, enjoy this video of me dying repeatedly:

How to face Watcher Knight: (used build: lvl2 nail, Quick Focus, Longnail, Soul Catcher, Spore Shroom, Thorn of Agony)

1. Aggro both Watcher Knights so they'll stay on the same side / didn't surround you.
2. Only hit the knight after they roll, or force them to swing their sword by engaging in close-range.
3. For healing, aggro both knights to a corner, then quickly dash yourself towards the opposite end for a single heal.
4. Tactical use of wall jump and monarch wings to avoid bouncing-roll Knights.
I've come to a conclusion that healing is a red herring in many boss fights. And it's very true for this fight. Energy is better used for magic missile attack (especially if you hit both of the Knights at once.
Don't be greedy, don't try to land 5 or 10 hits at a time, focus on dodging and hit them only if you feel it's perfectly safe to do so. I tried pure downward aerial and it didn't really work, when you are focused on jumping and striking it's harder to react in time to spins
Chandelier helps a lot (after I destroyed the Chandelier it took me 2 tries to kill the boss, while before that, well I tried a lot of times and failed, they exaust you)

went here, didnt know it was going to be a boss, beat it first try with my "exploration charm setup", ez game, ez lyfe.

@OP, have you beaten lost kin of soul tyrant yet? imo a lot harder bosses than this one (took me like 10 tries to beat soul tyrant, had to almost "cheese" the first phase by doing a pretty cowardly tactic)
I'm still trying. What do you mean by destroying the chandelier? There doesn't seem to be any hittable chandelier in the room.

Right after you leave the elevator, before going into the Boss Room, go up the wall between the elevator and the Gate for the boss, there's a hidden entrance there, and you can hit the Chandelier there.

I Didn't know of that and had to defeat all of them...
Thanks for the help. I finally did it. It probably took me about 90 minutes in total. The chandelier helped, but it was still a heck of a battle.
Joni's Blessing, Lifeblood Core, Stalwart Shell. Maybe replace Lifeblood Core with Quick Slash. Should be enough to burst them down before they can get through your ridiculous health.
