Spore Shroom, if you have it, can also do the same thing whenever you manage to heal, though unlike Defender's Crest, it won't prevent them from hitting you while you're trying to heal.
Try to stay on the ground as much as possible, against Lost Kin you're much more vulnerable in the air.
I remember that the thing i had the toughest time dodging was Lost Kin's jumps, which i had a tendency to dash into when most such jumps wouldn't have even hit me in the first place.
You can also come back to that fight later on, after getting a few more upgrades.
In my experience, the fight is largely about timing. The ghosts spawn at predictable intervals, so you can usually jump up to them right as they spawn and kill them before they become a problem. Depending on whether you combine the jump with dodging one of LK's attacks, you may want to use a horizontal slash instead of an upward one because horizontal slashes let you keep your upwards momentum, unlike upwards ones, which instantly cause you to drop you down if you land a hit. If LK is currently between attacks, or doing an attack that locks them in place, an upwards slash is much better as you'll be back on the ground earlier.
Note that LK also stuns pretty easily. If you have Quick Slash and Steady Body, you can land hits VERY quickly to build up a stun, which gives you time to heal. That should help keeping you in the fight until it's over.
