What healing can't make up for is strategic mistakes; the real challenge in this fight is figuring out what you need to do to win (and no, it's obviously not cheating).
Which is not to say the fight doesn't have some problems; in particular the brightness of the background is just plain ♥♥♥♥♥♥ up. Lowering the in-game brightness might help there, though. In addition, if you get unlucky with her teleports, the fight might be shorter or longer, but it'll never be unwinnable.
Coincidentally, if you're going to cheat your way into an achievement anyway, you may as well just go all the way and turn the achievement on with the Steam Achievement Manager. What's the point, though?
But really, it is the hardest fight in the game, but certainly winnable. "This boss is so fast, how do you dodge anything, this is impossible" are things one could reasonably think about several bosses in the game, then you learn them, you practice, and eventually they aren't that bad. You need good knowledge, strategy, reaction speed, accuracy, etc., but if you unlocked her you should have enough mechanical skill to do it. When I unlocked her, I took a day or two to just practice her, until I beat her twice in a row. Only at that point was I comfortable enough to do the pantheon, and I got the win on either my first or second attempt that made it that far.
Desolate dive is you friend on the teleport-platform stage, where you can get in close and really get a load of hits in with quick slash.
Add in abyss shriek with shamen stone and you can really get through to the teleport-platform very fast.
Yup my goto loadout is shamen stone, quick slash, strength, and that two point soul from hits thingy. You may want a loadout the favours prolonged fights when learning - quick slash can sometime make you take risks you shouldnt.
A huge help for me was on another post ... On the first stages the beam attack never repeats at the same place ... this gives opportunity for a very easy 1 point heal, frequent 2 point heal and you can even get 3 point heals in. Just be super-sensitive to knowing when the horizontal sword rains are coming (don't even start to heal when a sword rain is on its way).
The other important thing is patience ...
