General rule of thumb for bosses, don't panic heal, as you'll just end up taking more damage for your efforts. Only heal when he's down, and only heal if you can heal enough to take another hit. Having one mask and 30% soul won't help since you'd still be a one-hit kill.
If he keeps giving you trouble, like others said, come back later when you've got more stuff if you need to ^^
Generally speaking, without spoiling anything depending on where you're at, you can dash under Failed Champ when he jumps and he will be your umbrella and block the falling debris. He's also very weak to spells, so go in with full soul as Coco said.
As TattersTheBat said, you can also knock the falling "rocks" at FC for additional damage if you have a chance, but this might only be feasible during his tantrums. A little more detail on the trick for getting soul: Once you've managed to knock him down, dream nail the armour for soul, nail bounce on the body to refresh his stagger, rinse and repeat a couple of times so you can heal up and/or refill your soul vessel(s), then make sure to end the stagger by hitting the maggot's head a bunch (or the last round of damage won't count and you'll have to repeat it).
The rest of what I'd suggest for dealing with him depends heavily on where you're at in the game.
The only charm you'll need for this is Sharp Shadow
try to retreat and double jump if he jumps back
hit the falling rocks
cheese: when it gets stun, you can hit its armor rather than its head to prevent it from getting to the next phase.
Then you dream nail it to get soul
Finally you use shaman stone + quadruple shade soul to almost skip its next phase.

Of course it IS possible to just cherry tap him to death if you're really careful (i.e. no unnecessary risks; only attack him when there's an opening) and get his rhythm down.

Let me leave you with one line from my review of the game:
Now, onto the next battle, ✽Ðás0s™... ;)
2. His leap is easy to avoid
3. The shockwave hit is only caused if he jumps backwards. However, if he's close to a wall, he'll no jump back. Simply don't get near him if there's no room behind him.
4. You can hit the rocks back for massive damage if done well.
