This is the early part so there's not a lot of options to go with. A lot of people have difficulty with this fight, but really, all you can is learn her moves and handle them accordingly. My only advice is to play conservatively. Generally, try to keep your distance and don't get greedy. I would personally recommend healing over more aggressive tactics when you have some breathing room (like when she's staggered or during her throw attack). If you haven't already, equip Grubsong (grubfather after freeing ten grubs) and Soul Catcher. There's not a lot of tricks you can use against her. Just stay cautious, use your souls (heal or ranged attack, I would usually recommend the former) so they don't go to waste and keep a cool head and you should be fine.

No problem. It is possibly the most useful charm that costs only one notch, arguably the most reliable bar none, and there's never a situation where you won't at least get some use out of it. If you take the time to heal, it effectively increases your health by 33% (every three hits you take give you enough soul to heal). If you're managing your soul effectively it's an incredibly useful charm. I recommended healing over attacking, but don't be too hesitant to use your ranged spell either, as at this point it does triple the damage of your nail.

Wow, I never knew that Grubsong was that helpful

I beat her on my first try just dodging and using her attack where she jumps at you to get her at the edge of the screen so I could run to the other side and heal. When she throws the needle at you it won't reach if she is close enough to the edge of the screen. Otherwise just learn the moves and how to dodge them, it only gets worse from here.

Counterattacks. Greed kills so observe and adapt.

My issue is not really her attacks, when i try to dodge she just walks into me and i cannot get away fast enough so i end up dealing 2 health

How is that unavoidable? you can jump over her head

i have a habit of overeacting and end up doing a short jump and being hit

Also, How many rests does she have while in battle?

Two or three I think? She has 225 health so it will take an unupgraded nail 45 hits to beat her.

Keeping a cool head will do wonders for this fight, and like I said keeping a good distance make dodging a lot easier since you are certain which attack is coming long before she reaches you. She has a finite amount of attacks, so just memorize your favored method of dealing with each. You are going to need to jump. Don't worry so much about trading blows if you are taking hits regularly. The fight may last a long time if you play super carefully, but as long as you get two hits in for every hit she gets on you, you can basically heal back all the damages taken (assuming of course that you heal successfully).

Keep it up! You'll soon beat her. :)

I took a lot of time playing around before exploring the map, so I got good at keeping myself airborne.

Got he on my first try, and I barely touched the ground beside when she was pausing. ^^
I always avoid the attack then smack her in the back of the head.

Vengeful spirit does like 4 times more damage than your nail, the only problem is it uses soul so if you want to also heal you will need to be careful on how much of it you spend.
