The whole thing is a mask anyway. If it eats at all, it probably just pulls the food into its void-body and absorbs it. The Knight has no mouth of which to speak.

Questions it
Most of the bugs that are native to Hallownest wear some form of mask, usually in the form of faceplate that hides everything except for their eyes. The Knight's mask is different, by which I mean that it envelopes their entire head, seemingly fused to their body.
A few characters like the Elderbug and Zote have masks that are similarly affixed to their heads. However, unlike the Knight, they have opening for their mouths, while the Knight does not. Some of the npcs will comment on the Knight's unusual physiology.
You may notice that interacting with npcs prompts you to "listen" to them rather than "talk" to them. This is attributed to the Knight's lack of mechanism to speak.
A more indepth summation would require some spoilers.
All I imagine is the Knight just pointing to things that it wants to buy in stores or nodding and shaking their head to yes or no questions. Seeing as that'd be the extent in which it can communicate outside of writing.
