Yes, Collector is notoriously difficult with all bindings in P5, or even P3 (though obviously that's more manageable, from what I've heard).
Actually I just recently got around to making attempts and a few days ago I succeeded in practice with all-bindings (Attuned) Collector in the Hall of Gods (bindings mod). That was hard enough. I can't see myself ever trying it for real even in P3, let alone P5 itself. (I was just doing a bit of modified overtraining for individual bindings on P5, since I'm rusty on all bosses.)
I did do the charm binding without being allowed to use focus to heal though which was harder of course. I think what makes the charm binding so hard is that it impacts literally every aspect of your gameplay instead of just one like the others.
When I did the P1-P4 pantheon bindings though, I got in the habit of doing charm binding first because I felt like it would teach me how to do each fight properly. (This was a while ago before I was consistent with all of the fights, so I did bindings individually.)
