For me this fight is one of the hardest in the game, definitively. Even Team Cherry themselves ranked this fight P4, which means Watcher Knights are part of Pantheon 4 - the hardest Pantheon necessary for % Game Completion.
Just goes to show we all find different bosses harder than others. For me, I struggled with most bosses at least a little at first, but Broken Vessel / Lost Kin was particularly hard for me out of the bosses you would see in a normal playthrough, not including any DLC content. If i look back to the very first time I fought each boss, I think they, Traitor Lord, and The Radiance were the hardest for me (again, not including DLC stuff).
For the Watcher Knight fight in the Watcher's Tower, I could coast on full upgrades so it was still hard but it didn't take as many attempts as a number of other fights I had a hard time with at first. Nowadays, I'm confident about doing the (somewhat harder) Godhome version with any individual binding, because it's a very pattern-based boss and you can even directly influence what attacks they're going to do next to manipulate the fight in your favour. Not a lot of bosses let you do that.
I also find Lost Kin to be extremely difficult on Radiant, due to how much they jump onto my face despite all of my measures. Whenever I do them on Radiant, I use a pet + Doma build to cheese them.
