If you could see their HP, you might throw away attempts by taking unneeded risks to get the final hits in. If a player tried an inconsistent strategy and got far into a fight by pure luck(and knew that because they could see the HP), they would probably try the same strategy again, which would lead them down a frustrating path.
Speaking of frustration, player would also be much more frustrated from losing fights if they could see they were very close to victory when their health reached zero.

Besides, a reasonable player can tell how much HP is left based on their phases in many cases. For example, once Pure Vessel starts doing the tendril move you know he's down to 1/3 left.
