Use Vengeful Spirit when she is at a distance to push her back and get double hits with it
When she jumps in the air jump with her be ready to move or stay still if its the string spinning around her attack or dodge if she charges you
Best time to heal is when she is stunned and trying to catch her breath
Also something that isnt obvious, use Quick cast for casting spells, using focus will cause spells to have a pretty long delay, nearly half a second and that can cost you a hit
Another useful thing to learn is when you can heal. The most obvious example is when she's staggered.
Knowing enough healing opportunities combined with good enough dodging is the key for (almost) every boss, because once both parts of that combo are good enough, it means you cannot lose.
Also, taking breaks can help.
Side note : there are many ordeals (bossfights included) that include some secret nearby that can help at least slightly. In this case, there is one (though this one isn't that close, because it's meant for different ordeal), and it's behind a breakable wall right before the first moss knight fight (the one that locked you in), which is located two rooms right of the bossfight. The wall is in the same room as the moss knight fight, below the tablet at the top left of the room.
One approach to fight her is not going after her. You can keep your distance and let her get close to you to attack you. Then you dodge her attacks and that's the moment you counter attack her. Once you know her attacks, you'll se the openings to attack after her. I find this "passive" way easier, but it will last a little longer.

The fight has lots of healing opportunities, and I used it a lot.
In terms of actually defeating Hornet, while you probably will be spending most of your soul on healing, it's worth noting that Vengeful Spirit is a very powerful attack this early in the game (it deals the same amount of damage as 3 nail strikes), and it does have the potential to hit twice as Kagor mentioned above (though it's not something you can rely on much, it can happen if the spell hits her while she's running away from you or backdashing). Other than that, what everyone else said.
