If you press LEFT or RIGHT together with UP or DOWN, you will attack normally left or right, if I remember correctly.
TLDR; don't keep pressed left/right if you want to attack up or down.

PS. yes, I agree this could be improved. Hollow Knight has "I have to get used to it" controls. But I have seen much worse, and certainly wouldn't call the controls in HK "terrible".

Not sure if this is really a HK problem, but it wouldn't surprise me. The controls have a few other annoying quirks, but nothing really game breaking and they do seem to be consistent.
I didn't need to get used to it or anything, so maybe it depends on the person?
If you're using default controls, try mapping Up to V. Then walk left/right, pressing X+V at the same time. See if you get the same behaviour or not.
I played Megaman X games on keyboard and mouse when I was younger, and their control certainly was a lot more robust than HK's. When I change directions, I change directions immediately; when I jump onto the wall I need to hold the direction to stick and slide on it and if I so choose I can immediately let go by letting go of my direction key; when I jump on the walls I also have a relatively precise direction and strength I can choose for my jump; etc.
In HK however, it tries to give you some "hand holding" in the control related to wall movements or some others. The devs probably thought these benefits the players, but really though it just grapples with the player's control. This results in awkward wall controls, kind of weird jump control, and sticky direction facing that could be lethal in boss fights.
Sure you eventually learn your ways around it, but it would be nice to have a more robust control instead of an assisted one that depends on what the dev thinks what the conveniences are. It may have been a blessing for controller players idk since I don't use controller with HK, but as KB player I ain't that big fan of it.
I have this problem on my laptop and the game is almost unplayable for me.
