As for the fight, I would recommend keeping Unbreakable Strength, replacing Dreamshield with Quick Focus, and adding either Grubsong (if you don't get enough soul from simply hitting them) or Thorns of Agony (if you get enough soul, as this will allow you to get in more damage done to them therefore shorten the fight) for your last notch.
As an overall approach, don't move around or jump for no reason. Jumping can get you hit when they spawn in the air or throw their disks at you. Try to stand still in your preferred spot inbetween attacks.
For individual attacks:
Air drop: Dash away from your location as soon as you see one spawn in the air. Being quick enough to get near the spot they're at can allow you to get in some damage.
Ground dash: If you have trouble reacting to this, you could stand in one of the corners of the room. Otherwise, stand in the middle, and jump once you see one spawn on the ground. After jumping, dash towards where he spawned. During this, you could also try to pogo him for extra damage. Dashing is unnecessary if you can jump at the right time, as it only serves to give you a larger window to react.
For the double dash, you want to be in the middle. Once both of them spawn on opposite sides, simply jump without moving, and eventually try to pogo them for a nice amount of damage.
Disk throw: For the single version, if he's spawned higher above, dodge when the disk returns. If he's spawned lower, dodge when he sends it your way. A single jump should be enough, but dashing can be added once again for safety. Depending on your dodge, you can also reach in and deal some damage. It's also a good time to heal.
For the double version, stand in the very center. If they're fast, jump once they come back to you. If they're slow, simply stand still in the center and get in some healing.
The fight can be a bit tricky depending on the speed of your actions, but as far as the bosses go, they don't wander around and have a small number of attacks. Thanks to that, you know exactly what they will do the second they spawn on the screen. As long as you try to react to where they spawn rather than when they start to move, I think dodging should be fine.

Did you see a room on your way to the boss that had a mantis tribe member shut the gate on you as soon as you entered? Go back and check every room. One of them used to be cut off from you and now it should be accessible. Explore it for a bench and a reward.

This is one of those bosses where if you just focus on hitting the boss once after every single attack, the fight will be super safe.
Good charms here would be Quick Focus and Long Nail. I'm surprised you even have Unbreakable strength, definitely do keep that in your loadout. It's one of the best things you can have.
The boss is extremely predictable and can only really hit you if you get greedy. Just focus on dodging and punish all their attacks. They leave a perfect opening after lunging and after dashing down.
As for healing opportunities, most of the time they'll just hit you if you try to heal.
After you beat a mantis lord, there's gonna be a brief moment for you to heal the first time.
When they throw those boomerang things, these are your primary opportunities to heal 50% of the time.
If the boomerang attack starts from the ground, you can likely jump over and have enough time to heal. If it starts from above, don't bother.
On the attack in the second phase where they fire two boomerangs, There are times where the boomerangs will just kind of hover and not hit you if you stand in the middle of the room, this is a great time to heal.
If you can master their pattern, mantis lord gets pretty easy. I can beat them with just a broken nail and long nail.
