Instead of restarting I would just take a no-stress casual approach and just slowly but patiently see where I could get. At first it will seem like a totally new game and you will be really lost, but after just some wandering and messing with the UI, inventory etc. it will slowly all go back to you. The game is mostly about discovering the game world anyway, it's not like a kind of linear story game. You don't need to understand the story/lore at all. There are no objectives. So really no need for restarting unless you really want it 🙂
Start from the places you've already been to, go back to the beginning areas and see if there is something you've missed along the way. After a longer time of not playing you will have a new look at the game world and you will regain your playing skills.
Try to avoid watching videos of someone else playing, the game is best enjoyed on your own, where it's you who discovers new things. There are a lot of surprises that can be spoiled to you.
Anyway, whatever path you will choose, have a pleasant playthrough 🙂
Flew through the early content and quickly got passed my original save. I have no clue how I got stuck as I haven't struggled at all to find new paths.
