Anyway, I don't know for sure, but I think you'll miss nothing except for the poor Gravedigger's soul.
There are a number of ghosts that you can just consume with dreamnail, and they'll give you 1 essence each without any fight. I think nothing happens either if you consume them or if you don't.
None of the ghosts will gain new dialogues based on environmental change or story progression unlike some cast members. This is to indicate that ghosts appear to be stuck in a form of limbo. So you don't have to worry about missing dialogues with them if you've finished the first encounter. That said, while some ghosts seem to be some kind of existential loop playing out like a tape or they may retain some but severely crippled agency, however that isn't to suggest all ghosts are without as others you'd encounter may appear to be entirely self aware and may even express being content in their current state.
A sure way to know which is which is just to talk and exhaust their dialogues. If there is indeed a floating ghost that you can talk to and it doesn't go anywhere after finishing their dialogues, it's a ghost worth 1 essence.
Killing these passive ghosts as a whole won't affect any ending, but it's pointless to kill them with Dream Nail due to the fact they only worth 1 essence. There are plenty of essence to go around from Whispering Roots and Warrior Dreams without the need to scrap 1 essences off these passive ghosts. But it's your game.
