Do dream bosses like Prince Zote count to get the Hunters Mark?
Because he's really tough and I hate him. Are there any enemies that I don't have to kill so often to get 100% in the jounral or do I need to kill everyone?

I believe the ones prior to the dlc did. The game hasn't been updated to add the dlc bosses into the journal as far as I know.

What are the DLC bosses?

Zote isn't needed because he is entirely missable in a playthrough - by extension the dream boss against Grey Prince Zote is also not required. Because of what I'll explain below, White Defender is also not required. The other dream bosses (Failed Champion, Soul Tyrant, Lost Kin) do not have journal entries.

You only need your number of entries to reach the total listed in the Hunter's Journal - if it says 140/147 (random possible example) you only need to bring it up to 147. Certain enemies are "hidden" or "extras", like Menderbug and Zote. When you kill these kind of enemies, they are added to the journal and increment the total by one - thus you'd end up with 141/148. These type of enemies are not required for the Hunter's Mark.

White Defender and Grey Prince Zote (as well as all of the Zotelings) do have journal entries, however they are "extras" as I mentioned, and will increment the total. On my newest save file I have gotten the Hunter's Mark again before ever fighting them.

Okay. Do I also need the gladiators from the arena to complete the journal or can I leave these out as they are also optional? And what about final bosses? Can I explore the world after defeating them or do I have to give the journal to the hunter before facing them?

Everything in the arena (aside from Zote, who is missable if he died earlier) is required for the Hunter's Mark. You may have to replay some of the lower level arenas because if I'm not mistaken, there are not enough of the enemies to fill out the journal just completing each challenge once. However you do not have to repeat Trial of the Fool at all.

I can't recall if the final bosses are required or not unfortunately, so someone else may have to answer that, but you can explore the world after fighting them, and they each have journal entries as well.
