It's hard to tell since we do not know your entries in the hunter's journal. Typical enemies that are easily missed are:
- The two types of seemingly unkillable big bugs in Greenpath (they are designed as obstacles along the way to Nailmaster Sheo and the queen's gardens). One type is flying, the other one walking in the acid waters. Both can be destroyed using magic.
- The seemingly invincible crystal bugs that spit laser beams out of their backs. They can be destroyed using magic too.
- The golden husk in the City of Tears.
- The bee knight boss that was included since the Lifeblood update and didn't exist before.
-Have both big bugs (flying and walking) from Greenpath,
-Got crystal bugs (killable only with spells),
-Got golden husk (Gorgeus Husk, that's the one?),
-As stated above, killed him already.
I am also missing one mask shard, I think this translates into one missing % together with Hunter Mask.
Checking with list of Enemies from Hollow Knight wiki:
-I have everything under Main Game and Hidden Dreams.
-I don't have Nightmare King from Troupe; Nailmasters, Pure Vessel and Pale Lurker from Godmaster.
But I really think it might be one of the enemies that can only be added to the Hunter's Journal by finding the fossils of them. One of the ones Kshyh mentioned.
Another enemy that cannot be beaten but has an entry in the Hunter's Diary are the Lumaflies. They can be observed in a tank inside Monomon's Hideout to get the entry.
About the mask shard:
Maybe the one guarded by the Crystal Guardian? He has to be beaten twice and both versions have their own entry in the Hunter's Journal (since both entries look almost identical, maybe he is the missing enemy). Or the shard that you get by finishing the quest with the delicate flower?

Void Idol / Weathered Mask / Hunter's Mark are not required to obtain the Pure Completionist Achievement nor True Hunter.

I have all enemies from the trials (had to replay Conqueror for Oblobble), I'm not sure about Void Tendrils, I'll double check.

I'm not sure about the second Crystal Guardian, I went to the place shown on map on wiki, but there is nothing there, so I guess, I have killed him twice and don't even remember. Also are you sure about journal entry? On wiki there is only one Crystal Guardian.

Okay, my mistake. I got confused because since Godmaster DLC the second form of the crystal guardian is called "Enraged Guardian". But there is still only one entry in the journal.
Have you already tried to count the entries in the journal manually (and double checked the result). Just to make sure that this is not a rare bug/glitch in the game.
Did you ever meet the moss prophet? Along with him there are the "Mossy Vagabonds". If you meet him too late however the prophet and the vagabonds will already be dead, and the vagabonds could be accidently ignored (as seemingly background figures).
Btw.: The only really permanently missable character would be Zote. If you rescue him not soon enough (before defeating the Mantis Lords, I think) he will be completely "out of the game" making it impossible to complete the journal.
I haven't talked to the prophet, although I was sure I got mossy vagabonds before the infection. I will check that.
Zote was defeated by me both times (I even had to replay the dream version, as I waz thinking, that missing entry is one of his minions).
I guess you checked the bosses in the journal name by name (or image by image)? What I meant was really counting them, if you really have exactly 157 entries. If there are exactly 157 entries, then there are definitely entries missing. If you count more than 157 entries, then there may be something wrong with the journal.

-I have Zote, Grey zote and two types of his minions.
I remember somewhere someone was writing something about "big butt" somewhere in the game and asking if hitting it has any sense. Maybe it's something about that? I don't remember ever finding big butt.
