The enemies/bosses from content packs don't count either; that includes seal of binding.
I recommend checking the wiki, that's how I helped myself with the journal.
I think Hive Knight did count?
Yeah, Hive Knight is infact the exception to the trend of content pack enemies not counting. Lifeblood is treated as a content pack, as you can see by the way it's listed on the store page and in-game. Probably the smallest one though, unless you counted everything that was done for optimization along with it.

Agreed about store page though.
I was actually not referring to the specific wording in-game but rather the fact that it gets its own icon on the bottom left along with the other content packs on top of being a part of the list itself. To me it honestly looks like the update started out as optimizations for the switch version then turned into something a bit bigger and made its way to PC aswell. Probably why it's so confusing.
