There's a thread that was just posted recently with the same question, which has the answers we are able to provide for you.
Watcher Knights is, in my opinion, the most difficult mandatory boss in the game, so you're not alone.

1. There is a secret room above the watcher knights right before you enter. You need to break a celing. Inside this room, is a chandilier. if you break it, it falls on one of the knights, reducing the ammount of knights from 6 to 5. (never beaten them without this secret :D)
2. One thing that really helped me with most bosses was realising how powerful the spells are. Theyre a real help. especially in this fight.
spells are in the game for a reason my friend, and it's for whoopping those knights' arses, I beat them in one minute ish using lvl 4 nail, quick slash, defender's crest, something shell and longnail, just stayed close and kept spamming the attack button

I defeated them without spells on my first run. Granted, they were tough.

  1. Prepare your reflexes
  2. Whenever you see them move their nail, dash back.
  3. Whenever they roll, they will either jump or do a straight roll. Jump then dash when you see them about to do it(it dodges both attacks anyway).
  4. I'd recommend mark of pride for this one; Allows you to spam hits on them more conveniently.
  5. Remember that you can use super dash in combat. When they are close to the edge of the arena, climb the wall and super dash. They'll most likely prefer to just walk there, giving you time to heal once. Quick-focus makes this even easier and you can even heal twice, maybe thrice in some cases.
  6. If you have upgraded version of spells, you can just spam them and kill one of them in 1-4 spells.

On my second run, I use the Flukenest + Shade Soul on point-blank range combo that pretty much instakills them.

Watcher Knights can be done while half asleep with this method.

Shaman Stone + Flukenest == huge damage on your Vengeful Spirit. If you hit with every fluke on a cast then it will put the Watchful Knight to 10% health or less. It only takes a couple hits to finish them off, or a second spell cast.

Throw in Grubnest and some other soul filling item, or support charm as needed. Each Knight only need 1 cast + 2 hits roughly if your nail is in decent upgrade condition (2+). Entire battle should take you 1 minute.

These guys cannot do anything against spells.

Another thing is you can dream nail the dormant watchers in the background before the fight even starts, to start with a full soul gauge (dream nailing enemies gives you a bunch of soul)

I'm going after the 5h achievement and found a nice method with the couple of charms I've got.

If you have the ground slam (not good with names :episweat:) upgraded you get 1.5 ~ 2 secs of invulnerability, so I used 2 charms (I have just 4 notches), decrease soul for spells and more soul gain per nail hit.

The only way I found to deal with these guys efficiently was to delay fighting them until I have done everything I can elsewhere (so to have the best upgrades/charms possible), then equip full damage/tanking charms (notably two of the fragile charms), and I've managed to beat them easily. I've tried almsot any combo I could think of before that, to no avail. So make of that what you will, but switching my brain off and going for max nail damage and tankiness worked out pretty well for me

While I believe that spells are the best way to kill them efficiently, and that you can facetank them if you have the right build and enough health and nail upgrades, I know from experience that beating them with a more conventional nail strategy is made much easier if you have the shade cloak, as that helps you not get pinned between them when the two both spin at you from different angles.
