Just know that there will be a lot of backtracking if you play blind, and it’s rather light on story (on the surface at least), but if you’re okay with that then I really can’t recommend this game more.
In short get this game if you enjoy nonlinear exploration, deep but sparse narrative, bosses with patterns. Some of them have multiple phases, some don't. My memory is bad, so I can't remember which of those two categories holds the majority of the bosses in this game, but each boss has so much character I think you'll enjoy them all.
I highly recommend playing without looking up any guides.
I've never played Dark Souls so I can't say how similar they are but from what I've read the death mechanic is like Dark souls but not much more in this game.
This game is also not super hard like Cuphead. The exploration and sense of wonder is really gripping and bosses are not undefeatable or RNG nonsense and you usually seem to have alternate places to explore and level up a bit more and not get stuck at a boss.
However I highly recommend this game. The best metroidvania genre game in PC in my opinion.
Gameplay-wise it's nothing like Dark Souls. Action is far crisper and sometimes twitchy, and it's a true metroidvania (but then, Dark Souls is sometimes confusing as hell).
I bought this not long after Dead Cells, the Bioshock Infinite Season Pass and DOOM. This game's got all my attention right now.
It's not only a 2D Dork Soles, it's also a moving work of art, both visually and musically.
No really, just try it.

Hollow Knight is one of the best games to have come out this year, and for me personally, among the greatest games I've ever played. You won't regret buying it.
