Design wise - final boss: The Radiance. The entire battle is just in itself a beautiful spectacle. Absolute eye porn. Topped off with the haunting yet motivating music upon her title card and the lore significance just... MMMMM..
Difficulty - Mantis Lords. On my first playthru were easily the hardest fight i experienced in HK. It didn't help that I ignored Quirrel's message and so fought them with just the Old Nail. They were hard but very fair, with interesting movesets that were fun to react to. Having the pleasure of earning their respect and having them and all mantis bow as I pass just increased this tenfold. Their OST is also just kickass.
Fight itself - Nightmare King Grimm by far. A masterfully designed boss. While frustrating at first, having learned him, every time I refight him it feels like we are going through an elegant dancing performance to wow the crowd in the back. Simple yet magnificent.
My list would be similar to this, with a few little changes.
Nightmare King Grimm is probably my favourite fight in the game in all 3 categories. It's incredibly difficult, but as you learn the patterns and how to react it becomes almost like a duel between equals. Other than him:
Mantis Lords: Everything about this fight is great, from the way you actually challenge them, to the 'oh crap' moment when the second and third jump in at the same time, to the way they bow to you at the end. My only issue is how easy it is on repeat fights. (Mantis Lords dream boss when)
Hollow Knight: Not the most difficult fight, but I can understand why from both an in-game and out of game perspective. He can't be too difficult or fighting him + Radiance back-to-back would be too much, and in game he's actively resisting the Infection. The fight itself is almost like a scaled down Grimm fight, with similar moves, and the music ties it all together.
- Soul Tyrant (It is excellent as it appears and disappears avoiding attacks.)
- Lost King (His way of fighting and difficulty)
- Radiance (For the symbolism, the scenario where we fight and the background sound too.)
- White Defender (AAAAA HUNDAAAAA!!!!!!!!!!!!!)
Difficulty: A few bosses in game cause 2 damage, or have more HP, so they are likely more difficult. All things equal I think that the Grimm king is the hardest.
Fight Itself: Traitor Mantis Lord. Each boss battle was fun, but they were just a boss battle. The traitor mantgis Lord killed Cloth in my game, I replayed the fight multiple times hoping I could save her
