Well, if you make all the fragile charms unbreakable, then the Leg Eater doesn't have a purpose anymore.
Does anything happen if you talk to her while you have a fragile charm that is broken?

Quirrel doesn't die, he leaves Hallownest. He mentions in the City of Tears that he'd like to see where the rain comes from before he leaves Hallownest for good, and that's exactly what he does.
