edit:
Nevermind, I just made sure not to drop on the pressure plate from top and they dont move, they're seperate. Definitely move when the plate is pressed from top.
I'm almost certain the "pressure plate" does nothing, which is a shame, but I guess you can't discover secrets endlessly.
I believe the pressure plate in the stag nest opens up an area in the room directly to the left from where you drop down the well in dirthmouth (So basicly in the Forgotten Crossroads). This is in the tall room with a lot of Gruzzers. Notice that also here you can see a lot of chains in the back and foreground. So I think it therefore has a connection with the chains in the Stag Station as well.
What I noticed when I re-entered that room from the top right directly after having been to the Stag Station, and having the chains come down from there, was that there was a crack in the ceiling that I believe wasn't there before. When I opened it up it revealed a Whispering Root.
If you're talking about the the tall room with the entrance to the Grub father, that whispering root is accessible as soon as you have the Mantis Claw.
The chains come down in response with the working elevator. Elevator goes down, chains go down. Using Descending Dark on the big elevator platform (from far above or otherwise) doesn't change anything either as far as I can see.
Now I don't want to say there's nothing special going on here... After playing with the chains animation some more, I managed to get the big elevator up, it played a battle theme I hadn't heard in this game and loaded me into an encounter with Mew. I caught it with my Marmu Ball. Even has a Hunter's Journal entry, the top description says "Everything you read on the internet is true", the bottom one finishes it with "Silksong will have microtransactions".
