How does the "beloved" system work?
Look man I don't want to end up with fornival as my beloved tell me everything I need to know.

There is a point in the game where your "Beloved" gets locked in and it's too late for you to do anything about it. Giving the ring to whomever you want to be your beloved will raise that NPCs affinity towards you but that does not lock that NPC in to become your Beloved.

Affinity can decrease over time so once you give the ring to an NPC be sure you periodically speak with and or gift that NPC with stuff they like. Be sure you have raised the affinity of the NPC you've chosen by interacting with it prior to beginning the mission that will send you off towards that fort near the Water Gods Alter. Look on the History file to see how many males/females have max affinity for you. That pinkish glow that appears when you speak with an NPC indicates max affinity.

The last NPC you interact with that has max affinity towards you before you accept the mission I've described will be your beloved. So go find him or her and give them something they like, then accept the mission and don't interact with any other NPC that has high affinity towards you until after you enter the Great Wall for the first time. This is the easy way. The hard way is to go around and knock the crap out of all NPCs that have max affinity for you and lower it (except the one you want to become your beloved).
Fournival is the best NPC to hang around at your house though. I gave him an Arisen's Bond before the dragon because of this.

You can decrease it by bumping and grabbing them. If you see a pink glow you know they love ya if there affinity is high.
Yeah the thing is, we (as in I was part of it) found about the beloved is that if you have multiple people with the same affinity at max, then talking to them or giving to them anything to raise it will do nothing, because it will be decided by the npc id number, which ever has a lower number, will be selected after a certain quest. (the same goes if by some chance you ended up with max affinity more than 1 npc and both of them degraded at the same time, and you forgot to interact with them, so id will overrule what you thought you had)
The ring just maxes the affinity, it does not guarantee that you'll get them as your beloved if you shop too much as an example before doing a certain quest that actually kidnaps your beloved.
But in most scenarios just giving a ring is a safe bet to get the beloved you actually want to have, but it ain't a 100%.

So best bet is to skip time or draw your weapons out near other potential candidates that you've maxed by accident, and then interact little bit with who you actually want to be your beloved or just gift the ring, if you spent some time skipping. If you did the negative affinity thing to the ones you were suspicious of having also high affinity, then that should suffice unless you missed someone.

My fav combo is completing the Selene and Madeleine questlines, and make Aelinore as a beloved, then you have Selene and Aelinore in your bedroom and Madeleine nearby in the inn. You can also swap Aelinore for someone else out, while still maintaining the max amount of "waifus".

Wrong the last npc does not count, was already tested some years ago with multiple rings and npcs, npc id matters when you have multiple at max affinity. If you have multiple at the same affinity, but not max, then the last interaction will increase it higher than the other one was.

Granted Fournival is more valuable, but he's easy to find post-game. Reynard, on the other hand, may not be.
