Speedrun Mode also carries over all your stats, items, gold, gear, warp spots et cetera, and in fact relies on carryover to not take forever. Nothing you do in Speedrun Mode affects the main game so feel free to go all out with consumables. If you beat the mode you just get some costumes added to your main file's inventory.
The one thing to keep in mind is that playing on Speedrun Mode sets any Hard Mode save to Normal. You can't bump it back up to Hard without losing your story progress. So either do a Speedrun before or after your Hard Mode run.
