What does carry over?
What does carry over if I start the game on hard or speedrun mod? Will I be lv1 again or does lv/experience carry over too?

The one thing to keep in mind is that playing on Speedrun Mode sets any Hard Mode save to Normal. You can't bump it back up to Hard without losing your story progress. So either do a Speedrun before or after your Hard Mode run.
