Assassins can use Powder Blast. Plant the blast near the chest, walk away from the chest, walk back, set off the blast, then open the chest while the spark is following the gunpowder trail you left. If the trail is long enough you can open the chest before the blast goes off and the blast will hit the Maneater and free you.
Warriors and Fighters (and maybe Mystic Knights?) need to invest in the Fighter Augment called Egression. This allows you to escape from the Maneater in half the normal time, and thus with their high health/defense they should be able to get out before dying and be able to attack it.
Sorcerers have plenty of lingering spells, as you said - the one that summons dark spirits to aid you works well for Maneaters and can be gained pretty early. Mage doesn't have any really good lingering attack spells, but you CAN cast your most powerful Anodyne spell before opening the chest, that way your healing will counter-act the damage from the Maneater while you struggle to break free. So only vocation that might not have any good options in Ranger?
