If she's my beloved, she moves back in to Cassardis. Also she became a nun to infiltrate the church and get some inside information about the Arisen and the dragon. If anything, she's kind of a secret agent.
As for her looks, come on: this is a 2012 game, every character looks like a plastic doll. It doesn't matter what she looks like anyway, since it's all about roleplaying which is why I listed every other point first.
But anyway, not going to try and convince anyone, especially because I'm right :)

I also totally missed the Quina quest, and I do not think I saw her ever again after that.
No I think character call each other "cousin" like you'd now call person you're close to "homies". I dont think it has anything to do wiith blood related matters.

+ Seems kind of a badass at the start of the game
- Ruthlessly degraded by Julien, buuuut...
+ ...it opens her eyes to the problems in her home kingdom that she resolves to go back and fix
+ Drinks the stoutest of knights under the table
+ Has high expectations of herself
- Goes just a tad overboard on the self-deprecation
Not sure if you know, but the ring is near useless, the only thing it does it max the affinity for this character.
What you should do to ensure it's Mercedes is (a) max her affinity (either the arisen's band or just lots and lots of cloudwine), and (b) even more important: do not do any optional quests for other characters, do not talk to them at all if possible. There's another option (c) make sure to give any suspicious characters liquid effluvium right before the final battle. Quina, Madeleine, and even some male characters. You can look up in the history section how many female and male characters have maxed affinity to you.
You'd be surprised how easy it is to get a random character as beloved because you've done their quest. Julien is a good example. I've got him a few times because I wanted his shield and done the whole resurrection + prison visit.
