Report a translation problem
For the ENB, you need to remove/delete the d3d9.dll and any "ENB" files from whatever preset you're using. Most would likely include an "ENB" folder, enbseries.ini and enblocal.ini. At least that's all the ENB preset files I have. Most presets for DD have the same files, but double check on the mod page to be sure (or look at the archives with 7zip or Winrar in your downloads to see which files you extracted into DDDA).
If you really can't be bothered to go through all the mods you downloaded to see how to uninstall each one properly (recommended). You can always just delete Dragon's Dogma from your drive and reinstall since your save game is located elsewhere (within the Steam file structure).
Edit; once you get rid of all the mod files, before you start modding again, I highly recommend backing up the Dragon's Dogma files, particularly the "game_main.arc" file and everything in the "nativePC" folder. Or since you plan on merging mods, it might be a good idea to try using a mod manager, the only one that supports DD is the Nexus mod manager right now.
You're welcome. About NMM, I've only read that some people were using it for DD, given that many different mods overwrite the same files and lots overwrite the game_main.arc (probably why you're merging). I'm not sure which version to use so I don't know how well it works with all the mods for DD. But I know that not all the mods can the be used with a manager but some are trying to make it work properly given the popularity at which mods are/were getting for DD. They even gave DD it's own page. I only meant it as a suggestion if you wanted to look into it.
Also, is the unlimited sprint mod the only other mod besides your ENB stuff? If it's the regular "unlimited sprint" (not the sprint plus ds4 or sprint plus jump) then the page says it just overwrites the game_main.arc file. So all you should have to do for that mod, is verify your game cache. You will still have to manually remove all the ENB files and folders though.
Edit; if I have time soon, I'll post back here about using NMM with DD because I was thinking about updating my mods for DD now that there are some more texture mods. And I wanted to use a manager this time if possible.

Sure they not might have everything you want or have more than you want but I don't know much about merging mods yet for DD, I've only done it for Skyrim (with modding tools). But maybe look at these and see if you like them. The second one looks like it has a version of the Don't Blind me mod (I don't know if it's as good though since I personally use Don't Blind Me as well). I think the Don't Blind Me should work with the first one, SMC. As far as the ps4 buttons I know there is an Unlimited Sprint mod that has DS4 buttons with it but I don't know how many other mods work with it. And for faster magic casting, just get yourself a Wrymking's ring. If you don't have one or turn in the real one for the quest, I'd be happy to rent your pawn and gift an extra one to you, just give me your pawns name and level if you want it. All you have to do is put it in a spell casters inventory, works great if you have 2 WK rings and 2 Sorcerer's who sharecast a couple spells.
If you can't tell if the Gransys Texture mod is working then you might have installed it wrong, it does make a big difference with some of the grass textures around Cassardis and Gran Soren but the mod is incomplete so it won't change the grass everywhere. A good way to check is go into the sewer cave in Cassardis and where the Bandits are (the little room), the walls will be pink. I like the Gransys mod but I much prefer the 4k grass texture mod with rocks and roads as it looks much better with the ENB preset I'm using (Reforged). I also stopped using the Gransys mod because of the pink cave walls and I'm pretty sure it's the mod that was causing my screen to be super bright white in parts of the Everfall, I'll try it again if they work out the kinks because it's still a pretty good texture mod in certain areas (goes well with the Resonant ENB).
Sorry for the late reply, I've been busy. Yes if you delete the game and reinstall, all the mod files should be removed. Conversely you should just be able to verify the game cache and that will work too. If you do that, you will still have to manually remove the ENB and all ENB preset files and folders. Which is easy enough, just delete anything that has "ENB" on it.
About NMM, no it will not just auto merge mods for you. I should have worded that better. The short version of the way a mod manager works is that you can prioritize mods to be loaded before another mod that conflicts with it. Meaning a mod loaded after another will overwrite the first mod (if they conflict). Now if both mods change the same exact files, than the mod that overwrites will be the only mod that works (example; mods that change "game_main.arc"). It's also important to note that some mods just won't work together, this will usually be specified on the mod pages under "compatibility". And unless specified, these mods won't even work together if you merge them.
This is why I mentioned the compilation mods as you won't need to merge mods if you use those. But alas for some of the mods you want to use, you might just have to learn how to use the merge mod for DD. If you're going to use Nexus Mod Manager, I highly recommend reading everything you can on how it works.
I have personally decided not to use NMM for DD because I just don't need it right now given the mods I am using. But if I have time, I will try and mod my DD with the mods you specified and post back detailed instructions on how to get them to play nice together.
In the meantime, after you've removed all your mods make sure to back up all you DD files before you start modding again. This will make things much easier to revert back to vanilla DD if you mess up (which is inevitable when modding games).

Yeah, that's the tricky part with the way that many of the current mods work with Dragon's Dogma. A lot of the files that end up getting modified are stored in a handful of .arc files, so they don't tend to play well together. Merging mods isn't particularly difficult so long as you can figure out which files in a .arc were changed. Usually you can find a comment/post on the mod's discussion page on nexusmods that will tell you which files changed. At that point it's just a matter of extracting the original .arc you're replacing, copying over the files for each of the mods you want to merge (make sure they go in the correct sub-folders) and then repacking the .arc and sticking it in the correct spot in the Dragon's Dogma directory.
It sounds more complicated than it is. /shrug
Of course, this would be much easier if the mod authors were better about their documentation and included instructions for merging mods.

I was going to try using the ARC tool to merge these mods for OP myself, just because my only experience with merging mods is with Skyrim (plus it's always good to learn more) and that is a bit easier (at least on paper) with the tools you can use. Also, thanks for reminding me about the deleting DD folder (OP doing this will also remove your ENB files). I had mentioned earlier about OP maybe needing to look on the mod pages for the uninstall process because as you said, some mods add files instead of changing them. I should have been more clear about that when completely removing all mods by way of game uninstallation. I don't even know why I forgot to mention it since I actually just did that method myself yesterday.
Agreed as well about mod authors, it would be nice if they made things easier to understand sometimes. But I tend to give them a bit of slack, especially when it comes to modding games like DD without a proper modkit. If that means I have to learn how to mod games the hard way, so be it, the more I can learn the better.
