Weight = Encumberence+, Knockback Resist+, Stamina+, Stamina Regen Rate-, Walk Speed-
Weight also effects a couple of other things, like how long you can hold an Ogre down for and how able Harpies are to lift you.
Edit: To avoid confusion, this is all according to the wiki, and the wiki got the point about Walk Speed from the incorrect strategy guide.
It's actually based on height.
And it is.
Going to include height as well (although I believe there's a link to it in the Weight Page).

Height: http://dragonsdogma.wikia.com/wiki/Character_Height

These should sufficiently explain all intricacies.
I believe they're required for the 3* Knowledge on your Pawn for Shadow Fort, I may be wrong. . .
Yeah I did a whole run as a super short character and was quite disappointed about how there was only that one spot where it let me get somewhere new and there was nothing there.
And yeah, to whomever is confused, Height does NOT affect carry capacity, only Weight does. The biggest benefits to height are reach, faster walking (but not running) speed, and being able to wade in deeper water without lantern going out.
I also thought it was as you describe but...
Taller pawns definitely outpace me when running.
True. For the completionists out there, they ought to head inside at least once. That can be done after you get Secret of Metamorphosis and can freely change your height.
Don't care what the wiki says this is easy to test yourself, as I have done. It was widely known when the game came out that the strategy guide, which the wiki was based on, was WRONG on the speed effects of weight and height which was confirmed via testing.
A tall character (maybe long-legged is more precise) walks faster than a short character. However both tall and short characters RUN (by that I mean by pressing L3 and consuming stamina) at the same speed (the shorter character just pumps their legs faster to keep up).
In the case of "weight" it depends on if you are talking about character weight or encumbrance. Character weight doesn't affect your movement speed at all. Your ENCUMBRANCE (amount of stuff you are carrying) has a noticeable effect on both walk and run speed though.
This means that overall a large, tall character will consistently move faster, because they get a faster walk speed (from their long legs) and their high weight allows them to carry more without being encumbered, meaning they'll usually be in the lower encumbrance state and thus have the higher walk & run speeds from not being encumbered.
I'm surprised there's still argument about this 3 years later, I should make a video demonstrating this but you can easily try it yourself with a stop watch.
EDIT: Here's a source based on testing from way back that is more accurate than what's on the wiki:
