Modifying save to alter all your party Pawns' appearances is easy enough, but editing game files is harder,
BTW I recall that there is a mod that modifies all offlines to females, including Rook.
I made Rook a sexy girl clad in Recluse's Robe and he was back himself in the video.
Tough luck.
Just fire him in a riftstone (or toss him off a cliff) then hire any other pawn in his place.
The cutscene takes place after the first trial, meaning the game technically doesn't allow any swapping for rook before the scene.
BTW I will save you time and tell you to forget about editing

The other day I was messing with this, to prove someone that there's no female Rook in the game, and even modding this file (contains offline Pawn's data, including offline Rook) didn't manage to affect the cutscenes.
Again, it looks like cutscenes' settings are governed by sepearate files. You're welcome to try and find them but I sense a lost cause.
Rook datas are on the save file as soon as he join the party. So you can pretty easily edit him here.
Also all datas of all offline pawns (including Rook) are in the game files.
Though you need to know which archive contain the pawns and unpack it first before editing anything, then repack it.
This require slightly more research on what software to use (for unpacking the archives and then for editing them), which archive you need to open to find the pawns then Rook datas... but it's fairly doable.... it's the same as editing models for armor, clothes, weapons, etc...
I wouldnt recommand making Rook female though.... might lead to weird result (I'm pretty sure there's no female assets for Rook dialog in cutscenes) or even crashes....
Not really... I big afternoon is enough to figure out how to do things. There's an editor available online. Though I'm saying this only for cosmetic changes, never try mechanics/gameplay changes.
