The Beloved is the person kidnapped by the Dragon at the end of Deny Salvation - the final battle scene of this quest (vs. Wights) is the cut-off point. Before that you can impact the Dragon's choice.
The Dragon kidnaps the NPC with highest Affinity for the Arisen - ties are solved using in-engine priority list - which really bonkers, eg Mercedes is no 301 on the list, while Aelinore is 102.
BTW Talking to ppl raises Affinity.
It's more of me going through this information in a rush, because my main point was the choice of beloved at the final cutscene at the beach.
As mentioned, I wanted Aelinore, even gave her the Arisen's Bond, but got Quina locked in because she was the last "pink aura" I spoke to and I can no longer get Aelinore as this is post- rescuing her.
But Quina wasnt the beloved I saw at the ending cutscene at the beach. I got Selene.
I was on the assumption that the choice of beloved was locked from, when you say, all the way back in 'Deny Salvation' once its revealed Grigori kidnapped them, so this is a strange surprise.
As I said, talking to ppl raises Affinity. If Selene and Beloved had similar level of Affinity at the same time during Stage 7 then this one interaction could tip the scales in favor of Selene. Also, if you have scared the Beloved or bumped into them, that lowers Affinity, apart from daily decay.
