it's called the "metamorphosis" something and is a one time use.
you can change your pawns class anytime you want after level 10 and costs DP (discipline points). you do this at an inn via the innkeeper by talking to them and choose "change vocation"
If you are talking about changing stats (like more health) then you're out of luck, though.
1.1 Eventually you can purchase a one-time access to character editor at Johnathan at the Encampment, for Rift Crystals, a lot.
2. If your concern is Main Pawn support rate then know that your Pawn may be ordered to support you, with the Help! command. If the Pawn is of Medicant inclination, or has no other options, it will prioritize healing.
2.1 There're are 2 ways of boosting Medicant inclination, easy/pricey way and hard (but cheap) way. I bet you cannot affor the pricey one, so just hire support pawns with medicant inclination on top and they will "inflict it" one your Pawn with time.
2.2 If you've been doing the cycle of fighting and aiding a fallen Pawn a lot Pawn may catch a Nexus inclination, which will cause it to prioritize the support of other Pawns. You probably want to get rid of it. If it's a secondary inclination then just use the Knowledge chair (there is always one wherever you can rest) and swap Nexus to a different inclination. If it's primary, you have a problem...
tl;dr start saving Rift Crystals for elixirs (Johnathan at the Encampment) or ask someone to hire your Pawn.
3. If your concern is Pawn stats then there's not much you can do. Mages are squishy. And the more your Pawn will learn about enemies the better it will become at avoiding danger (doesn't mean purrfect), Give it the best armor you can get (enhance it as much you can), I guess.
3.1 Now, you could also change the Main Pawn Vocation (class) to Strider or Fighter and with each level it would gain better Health, but it takes time and the Pawn won't be much use to you in healing dept. without group curatives, so I don't recommend it.
BTW I assume you give your Main Pawn Health curatives? It will desperately try to heal itself with Anodyne anyway, but you never know. Give it the best curatives you have as in combat Pawns don't care much about their HPs above Critical level. Also be sure it has full Health before combat: force it to use curatives out of combat (Help!) and/or stand near Riftstones/healing springs for free healing.
Very useful tool which allows you to configure your pawns as well.
