Did you confuse Dragon's Dogma forum for Dark Souls forum?
The large enemies have so much Health points that they are spread across multiple Health bars.
As you are dealing damage you clear one bar and start another - which is symbolized by 1 dot (under the bar) getting dimmed. These dots show how many additional Health bars the enemy has left - when all purple dots are blackened that means that the current Health bar is the last.
If your fight takes 1h then you are either underpowered or doing something wrong. Drake is perfectly doable at ~ level 20, provided you are well prepared. Which Vocation are we talking about?
The idea is that since the dragons are so tanky you only go to town with them when they are reeling helpless on the ground, and receive extra damage. So your skills should be focused on hitting hard rather than often, eg Mighty Bend for Strider, Deathly Arrow for a Ranger.
BTW The great opportunity for knocking down the Drake is when it has grabbed your Pawn and tries to possess it. Attack the palm of a supporting hand.
Your level matters less than your actual stats. Be sure you have at least 350-400 total Strength (less important for a Ranger). Ice enchantment on your weapons from a friendly caster will help too.

Strider: fracture dart
Magic archer: Shotgun blast the heart using Sixfold
Hunter's bow or pleach limb pretty strong enough
In the end you will finish him off in the heart.

I found them very hard to fight early and they regularly either devastated my pawns or turned them against me. I am glad you found a method that while slow worked out! I will have my pawn knock a pint back for you in the rift.
