Now, for a melee range you definitely want to go with Thunder Riposte. It's broken effective vs overhead smash.
That's a fall flat knockdown btw, not really suitable for climbing. If you want the prisoner on its knees you have to pick Frost Riposte and, well, I hope you are good with Perfect Blocking (avoid disarming the enemy or the fight will drag hard).
Anyway, once you have the prisoner downed you have to decide what skill to use on it.
With staff the choice is easy: Holy Focused Bolt if you can aim straight at the sole of its foot, so the beams could go through the leg and to the head. Frigor if you can go for the eye - basically only on the knees knockdown.
If you have decided to climb, or have a good access to the eye, Abyssal Anguish, hands down.
If your Pawn is a Sorc equip just Necromancy, Malestrom and Gicel on it. Necromancy is for knockdown. If your lil Sorcerer will manage to cast one of the archsorceries (bring other Sorcerers with the same spells maybe) they have the capacity to melt the creature.

1. smack the backfoot ankle from the inner back
2. knock him on his ass and smash his face in
3. force block his toes so he falls with Dark
4. HFB
5. Ice
You'll note none of these things do slash damage except 1
Beware not to disarm him when you block his club attacks, it's better to block his stompings... CGC is way more dangerous unarmed than armed (faster grab, grab with both hands, faster attacks).
Then with following knock downs, just attack his head while he's laying on the floor. There's 2 methods:
- cast perillous sigils at his head, especially if you got an almace or mage breaker since your sigil will have the ice effect of your weapon.
- climbing his face..... but dont stay on him when he start to get back up (use a heavy attack to jump off as soon as he start getting back up).
The best skill after thunder counter will be perillous sigil. Every time you got the time to do so safely (while he's swinging his club away from you or when he get staggered by one of your counter, but not knocked down), plant a sigil and wait for the next attack to counter in it. That way it'll take both the damages of your counter and your sigil at the same time when attacking.
Abyssal anguish can also help you (combine the power of your shield and your main weapon), but you will have to waste one knock down to cast it mid fight (the time required to cast it will be too long and he will be back on his feet once you're done casting).
Hopefully, while you keep him busy and repeatedly knocked down, your sorcerer pawn will complete a glicel and hit him while he's knocked down, ending the fight.
I'd recommand to try to get your hands on the ice sword (almace) or mace (mage breaker), ice being the best element against the CGC.
Oh... and ofc the skill ring for the third tier of the thunder counter....
