You do not need to attack them, just sheathe/unsheathe your weapons near them to lower affinity. Alternatively, if you have access to Barroch in BBI and completed "Eyes of the Deep" you can buy something called Liquid Effluvium from him. Gifting that to anyone will instantly drop their affinity back down to zero.
When I once went for my speedrun (meaning no saves etc), I just skipped all quests and being nice to anyone. And who do you think I ended up with as Beloved? You guessed it - Mercedes.
Game works in mysterical ways.

Every time you talk to someone, you raise their affinity by just a little bit. It gradually accumulates. It's possible to raise an NPC's affinity really high by doing things the NPC approves of-- in this case, Aldous requires a lot of interaction because he hands out a significant portion of the main quest.
As stated above, all you need to do is draw your weapons while you're standing near to him, and he fill flinch. Do this enough times, and his affinity will plummet. Liquid Effluvium does the same thing, so does a failed escort quest (e.g., the NPC dies) or you pick them up (committing assault which sends you to jail) and the like. If affinity drops to the point where the NPC actively dislikes you, they will run from you.
All affinity, positive and negative, slowly moves back to neutral over extended amounts of game time.
Therefore, if the TC wants Mercedes as love interest, it's a good idea if no NPC raises affinity after Pride Before a Fall completes. Since you have to talk to Aldous, draw weapons to lower his affinity; I'd do this to ANY NPC spoken to after Pride Before a Fall. If you decide to do Alienore's quest line, just before you exit the Blighted Manse and complete that quest, toss her a few times off the nearest bridge so she's taken some damage, and bare your weapons until she flinches a few times at you. Even better, take a Liquid Effluvium along and give it to her just before you leave. All this ensures that the massive boost you get to her affinity as the quest auto-completes doesn't boost her higher than Mercedes-- assuming you just don't skip the quest completely to be sure.
