On the note of the monster difficulty, depending on your difficulty level (easy, normal, hard) you'll find certain monsters that are intended to as as mini-bosses. Some of these are optional (like what you find in the wilderness) while others are manditory (like the ogre's in the quary needed to finish the quest there). On normal mode, at around level 20, an ogre in the quary would still be a difficult and long fight with the gear available at that early part in the game. Even with great team composition, those fights are both dangerious and tedious (unless they run themselves into a bunch of explosive barrles). You won't find an Centuars though. Just know that all fights are not going to be easy and are intended to take time, patience, and skill (especialy on hard mode from level 1).
I've sunk a half hour on one of the weakest (Devil's Fire Grove drake) and lost with him at one health bar. Multiple times.
Pro tip: If you can find them, Wakestones are a must for big fights. However, they only really get common in the Everfall.
Special emphasis on the plural S. Get more than one together (preferable with utilitarian inclinations) and watch the death rain from the sky.
It tends to work. Think Dark Souls but easier and way more forgiving. And, not really.
Every monster has weak areas that take time to figure out. Its part of the fun. Also, once your pawn learns it, they will be more useful at big monster takedowns.
When you reach level 30 in normal mode, you will be fine with most field encounters.
