Just wait a few days. For every game day that passes, an NPC's liking and disliking of you will nutralize a little bit. Generally, after 7 game days of not talking to an npc, they will be 100% nutral to you.

An extra bit of knowledge on the subject: if you're trying to maintain npc happiness, just talk to them once a day. Any interaction with an npc will give you a small boost in affection. I'm not sure if you can spam talking with one just to get them to fall in love. Seems you could but it would take a LONG time of just talking.

Do you mean you got him as your beloved in the post-game?

If so, you're stuck with him until you decide to restart the game or do a NG+ run.

What if I accidentally stab him ?

If you 'accidentally' stab him, he'll either run away or die.

NPCs respawn after a while, usually seven game days. He'll respawn in Your House until you go to NG+.

To make sure I avoid that, I've been running around giving liquid effluvium to anyone I hear the chime from, expect the one I want as beloved (that one, I stabbed by accident. Stupid attack key being the same as the gift key). I had 57 people at max affinity last time I checked... Hopefully, it's much lower now.

Turns out that the number of people at max affinity in the history log is the total ever, so now I'm at 59, even after giving nearly everyone liquid effluvium.

Yeah, I heard the sound for decreased affinity, and watched her crumple on the ground very slowly. Had time to revive her before being thrown into the dungeon, though.
