An extra bit of knowledge on the subject: if you're trying to maintain npc happiness, just talk to them once a day. Any interaction with an npc will give you a small boost in affection. I'm not sure if you can spam talking with one just to get them to fall in love. Seems you could but it would take a LONG time of just talking.

Do you mean you got him as your beloved in the post-game?
If so, you're stuck with him until you decide to restart the game or do a NG+ run.
What if I accidentally stab him ?
NPCs respawn after a while, usually seven game days. He'll respawn in Your House until you go to NG+.

Yeah, I heard the sound for decreased affinity, and watched her crumple on the ground very slowly. Had time to revive her before being thrown into the dungeon, though.
