As for tanky enemies: it actually depends on your own strenght/weapon attack value vs. their defense -> if you can't break their defense, then damage you do is reduced to 1HP per hit or less.
I.e. you need to level up a bit more, and/or upgrade your weapons a bit (Reynard can help early game with that if you have the materials) and/or get different weapons (there's a whole slew of early weapons you get access to from the moment you leave cassardis, you just need to know where to go.)
Once you get past that damage threshold, those enemies die in 3 or 4 hits.

BTW You have to try really hard to be underleveled for the main game content - and by content I mean quests not chores and escorts that cast you around the map. At best the Lost and Found may cause issues, but you still can go around any issues you encounter. Open world y know.
