If you see equipment you don't remember obtaining, then it's because it's in your storage. When changing equipment at an inn (which also is where you change vocation), you can choose gear that's in storage as well as stuff that's in your inventory. If you choose a piece of gear in storage, it's automatically moved to your inventory and equipped.
You haven't screwed up - not permanently, at least. Simply go back to the inn, choose to manage your storage, and select 'change equipment'. You'll be able to see all the stuff in your storage once again.
If you're playing Dark Arisen on PC, then you actually start the game with several fairly-strong-for-how-early-you-get-them pieces of equipment based on Bitterblack Isle NPCs in your storage. This is probably the gear you thought you were being offered.
Anyway, you can switch freely between your bought Vocations, but mind that weapons and armor, as well as certain skills have Vocation requirements.
