Post-game drakes are garbage. Nothing but fly away.
I killed the Devilfire Drake 25 levels ago with a weapon that was a whopping 300 strength. Now I've got a 1600 weapon and they ALWAYS fly away. ♥♥♥♥'s ridiculous.

I'd say you're doing it wrong since I've never had this problem but so many people complain about this same thing. Not sure what you could be doing that causes them to leave other than make sure you aren' leaving the dragon's battle ground;. Some have very small ones that are barily big enough to contain them.

Rotunda of Dread and Black Abbey in BBI is one solution.

Other than that in postgame there will be new drake spawns, one Drake outside Gran Soren (near the road to the abbey), a Wyrm in The Watergod's Alter, a Wyvern at the top of Bluemoon Tower.

Drakes, Wyrms, and Wyverns will always try to fly back to their spawn when they get too far away from it. The Wyvern on champion's road is broken as hell. Its spawn seems to be in the ocean and it resets easily. The Devilfire Drake will break if it gets too close to the road. It's trying to fly back to its spawn in the forest but it gets confused for some reason. I've only experienced this behavior with it when it gets near the road, and only sometimes. It seems to work fine if it resets shadow fort side. So as long as you avoid the road, you should be fine.

I've never seen a drake flee. Didn't think they could. I haven't been fighting the Devilfire one post-game, though. I'd guess you might just have been leaving the designated area.

The Wyrm and Wyvern mentioned are the special ones so the equivalent would be the drake at Conqueror's Sanctuary. That drake outside the Quarry (or GS) is the one I usually kill and it's never fled in any way.

It's the one outside of Gran Soren. I've been hugging him, and I pretty much keep him in one spot. Great Cannon is broken as ♥♥♥♥ when you summon 3 of them and then go ham with ice attacks, so I take the thing down to one bar in 2 minutes, but then he goes immune and flies away as soon as that last bar loses any amount of health.

The Devilfire Drake doesn't do this. He just dies and dies and dies. I'll probably just stick to that one.

If that's broken, try High Gicel. Brings it down to one bar in one cast. It's never happened to me despite killing it quicker a whole bunch of times, so I think you're unlucky.

Dragons and that Griffin at Hillfigure Knoll tend to be bugged almost all the time during Post-Game.

They don't land, though you hear them flying nearby or the Ambush quest is triggered and you can't do anything about it. But when they do land, it lasts for maybe a few seconds and they fly off to land somewhere beyond your reach. I've had a Wyvern land in the water once, killing itself.
They land. I've killed all of them on the ground and had the majority of the combat be on the ground.

"They land."

Yeah, for you maybe. It's been well known since its original game (Pre-Dark Arisen) release back on console that the Wyvern and Griffin during Post-Game are bugged. Do they land? Sure. From personal experience, however, it's happens rarily.
Not for me and most of my friends that play the game, and I know. I'm also from 2012.

I really just don't believe that. I would really like to see you post a video getting the wyvern to land without moving after aggroing it and without knocking it out of the air.

If you don't kite it until its altitude is corrected, it will just break.

Silly question but are you targeting the wings? They are like any other creature and have weak spots.
