Action based ones like blade and soul or tera for example, that's the only two I know because I played them but I'm sure there's probably plenty of others if you search a little. Btw Tera is available on steam.
Also I eard some pretty nice things about warframe, I've never played it yet, because I'm a bit bored of the MMO concept alltogether, but it might be worth a try. It's available on steam too I believe.
MONSTER HUNTER WORLD is pretty much this. sadly the monster mounting mechanic isnt quite the same, but the whole premise of the game is group up with your buddies and fight a boss monster. Its also set in a High Fantasy/steam punk setting.
ESO is alright but MHW is closer to the feel i think your going for.
It has different weapons with far different mechanics, and combos. Dualblades with lightning fast, but short attacks, which can be turned into 'Demon mode' to attack in more quick ways. Greatsword is a hit and run, or unleash devastating but simple combos. Or Charge blade, which morphs from a Sword and Shield to block and counter attack, or charge phials to morph it into a big and explosive Axe. Or take the skies with the Insect glaive to jump around, it is also aided by an insect companion. These are only a fracture of all there is.
There are *many* varying bosses to fight, to be blunt, the entire game is about intense bossbattles. Ranging from oversized flesh dogs, to wyverns, all the way to massive gold reptiles.
Up to 4 players, or alone with your useless cat companion.
