Can I put escort missions back on the board and expect them to be there later?
So, I took the Adaro escort mission when I was level 12. I made it past the bandits, the lizard-fold, and then small army of goblins. Then far off in the distance I see what looks like a dragon (from what I've read online, its actually a chimera). A strong sense of "nope" welled up inside me at the sight and I bolted, thinking I could sprint there and the old guy would magically appear by my side upon area transition. Didn't work and I failed the quest. I'm confident that I can't take that thing at my level. Maybe if I turned the difficulty to Easy, but I'd rather not do that.

Can I just...go back to the Notice Board, put the quest back, and expect it to be there when I've leveled up a bit...maybe gotten some better gear?

edit: I should clarify something. I restarted from my last checkpoint, so the quest is in an incomplete, but not failed state. I can still put it back on the board.

All that said, the quest can indeed be returned to the notice board. It will remain there as long as Adaro's liking for you remains high enough; if the quest disappears, all you need do is find Adaro and make a few gifts to him of either Hardspud Sauce or the thing he prefers and it will be back. He likes Beast-Steaks and Ambrosial Meat.

If it were a chimera you would have noticed. A chimera is a beast with the body and head of a lion, the head of a goat on it's back and a snake as a tail.

I think you encountered some kind of Dragonkin, like a Wyrm, Wyvern or Drake. They look like dragons, just smaller than Grigori.

Back to your question, if you failed an escort mission you can't retry it until NG+.

As for the dragon like thing...so was I right to assume that its a heavy hitter that would probably hardly notice rofl-stomping me?

When you exited the quarry you should have turned right. Stay near the rocks on your right and you only have a few goblins to contend with until you reach the shadow fort.

Yes, they are one of the harder enemies of the game, you should only engage them if you and your pawns have a high enough level and the necessary equipment.

Main point of escort quests is to improve your affinity with the NPC you're escorting (without spoiler, this have an importance later in the game).
Though some have an interesting reward, but most just give random items/consummables.

Dont bother with escort quests before you get your hands on the eternal ferry stone and at least one portcrystal.

The trick is:
- Take the escort quest.
- Open your map and put a custom marker at the quest destination.
- Cancel the quest.
- Go at that marker you just created and put your portcrystal down.
- Return to the same board and retake the quest.
- Teleport to the destination.
- Quest complete.

You'll quickly notice that those escort destinations are the same for many NPCs. So dont grab back your portcrystal immediately after each quest, you might have other NPCs to bring there...

I just finished Everfall (the first phase I guess) and got a portal stone. That was the thought I had. I'm turning in for the night, but I determined I'd try exactly that tomorrow. Thanks for the verification that that would work!

I go place port crystals at the Shadow Fort, Blue Mood Tower, Bloodwater Beach, The furthest northern spring watering hole, Devilfire Grove, Hillfigure Knoll and the Great Wall. There are multiple escort or quest missions to each of those locations. Then I simply take on whatever quest or missions involves those places and insta travel to them. If it's an escort mission they tag along and it's done. Did U go back to Cassardis and then go find Quinna in the Witchwood before doing the 1st Everfall mission? If not you should have.

You mean Lost and Found? Yeah, I did that. After failing that flower quest, I started looked for warnings about such things.
