Where do I (Warrior) get good armor at level 30+?
Most of my armor is still the stuff I had at like level 15 (some few things are DLC). I have ~750k gold, but nobody seems to be selling something good? The blacksmith in Gran Soren doesn't sell anything good. And stuff sold at the Black Cat looks great, but is really bad...

Shop inventory is updated progressively as the main quest advances its stages. Therefore, if you've been out exploring instead of questing, that can kind of, uh, bite you in the ass.

Oh, I thought new items are unlocked in the shops by leveling... I didn't want to miss side quests so I mainly did those.

Since it's an open world you can go out and find better gear before the story progresses to that point (bluemoon tower and soulflayer canyon). Enemies don't level with you though so it's not really necessary.

As a warrior I found the Solar chest armor with bronze and a steel shield to be quite good for a time. Then I switched to the Griffon armor set. The Solar armor is a quest reward as I recall, but it can also be bought. Griffon armor, the chest anyway is a drop and can also be bought along with the set pieces. Keep in mind all armor can be enhanced up 3 levels from base. Also if you have at least one of the items needed to enhance, you can have duplicates made at the black cat which is handy for the ones that never seem to turn up as loot.

LOL, go to the Great Wall, it's the final battle location but it sells most of the end game armor at any time.

Can I just go there and buy stuff? I was at the Bluemoon Tower before and I think I wasn't able to enter it...

Greatwall Encampment is available from the moment you reach Gran Soren, it doesn't sell end game armour until end game, but at the start of the game it has disproportionately high quality stock. It's the best way to begin your game, the next good stuff you'll probably get is off the merchant you give the gold idol to. Some classes can loot specific high end weapons at specific places too (eg. Leaper's Ledge).

Assuming your screenshot is of the quest griffon, there should already be the Gryphic Set available (first 'real' full plate set you can buy). If it's the random griffon, you'll have to wait some.

I went to the Great Wall Encampment, but they didn't have anything worth buying...
