Seriously thought, breaking its "Shield" with Shieldbreaker then just spamming attacks is the way here. Two handed Hammers and obviously Axes are very useful here. Also if you can abuse the fact they are slow when its more then 1 (usually is) so you can kill one whilst the other cant attack you.
Care when doing the usual 2 man line attack (or how people call it, one guy in melee, the other one field behind, usually polearm or ranged attacker) since Schrats have a straight line attack that hits them all. Lost a few unhealthier Polebros this way
2. Use the forest terrain, try to stand behind choke points so that they have to jump into you but it's not easy for multiples of them to get involved at a time. If you play it right then some will waste their turns going around the forest instead of blobbing into you, but it's hard to describe how to elicit this kind of behavior. The biggest thing you want to avoid is them all clumping together.
3. Avoid lining up your bros so that they can only hit hopefully one bro at a time. Use the safe spaces for your polearms and poleaxes. Pathfinder helps a lot to shuffle polearms in and out of position.
4. If you have Taunt, then that can help, but it only works if they cannot AoE your team.
5. Focus them one or two at a time. Try and surround them if you don't want sapplings coming up, but if that puts your bros in too much danger then just ignore the saps until the main body is dead.
6. Dropping dogs can take up sapling spots, but your dogs may also get in your way.
7. They take reduced damage from piercing type weapons and extra damage from fire.
8. 2H Mace Daze, and/or Overwhelm can reduce the threat of their attacks.
9. Nimble takes the damage much better than Forge, so be more careful about where your Forge guys are. If you have any low level bros on the field then try and make sure they can never be attacked.
10. Bench your ranged units or if you have to bring them then either give them Longaxes to help with chopping, or Throwing Axes for damage.
11. If there are a lot of Schrats then have good Indom tanks spread out to tie some down while the bulk of your team sticks together to drop the ones not stuck on your tanks.
